A method for manufacturing a functional fish having remarkably reduced smell and reinforced flesh and a fish thereof are provided to improve its light and sweet taste and to achieve an efficacy of prevention of obesity and constipation from the extract of Saururus Chinensis and pine needles. A method for manufacturing a functional fish having remarkably reduced smell and reinforced flesh includes the steps of: cutting the abdomen, removing internal organs, and washing a fish with fresh water; preparing a brine mixture which includes 2 liter of Saururus Chinensis extract, 2 liter of pine needle extract, and 1liter of 0.04% brine; submerging the fish into the prepared brine mixture for 1hr 50min providing oxygen from an oxygen generator; maturating and half-drying the fish by keeping it in a maturation room at 13~17°C for 200min; and maturating and freezing the fish in a freezer at less than 25°C for 12hr. |
