FUNCTIONAL MEAT PRODUCT USING KIMCHI AND METHOD FOR PREPARING THE SAME

A processed meat product using kimchi and a preparation method thereof are provided to prevent various geriatric diseases such as coronary artery diseases and cancers and enhance the taste and flavor of meat products. A processed meat product using kimchi is prepared by the steps of: (a) removing water and juice from kimchi by a squeezer; (b) chopping kimchi by a cutter to enlarge the surface area of kimchi, and drying it by a hot-air dryer and/or a freeze-dryer; (c) grinding the chopped and dried kimchi, and pulverizing it by a 35mesh sieve; and (d) mixing the kimchi powder to raw meat consisting of 70~90wt% of pork and 10~30wt% of fat. The mixing step is performed in cold storage by using a tumbler.
