摘要 <p><P>PROBLEM TO BE SOLVED: To provide a new buckwheat distilled spirit added with original flavor of buckwheat, and to provide a method for producing the same. <P>SOLUTION: The buckwheat distilled spirit is produced by adding water and yeast to malted rice, and agitating well with a paddle rod or the like in a primary brewing process, aimed at fermentation of unrefined liquor at a temperature of 25 to 30°C for 3 to 5 days to obtain a primary unrefined liquor. Then furthermore, in a secondary brewing process, steamed/gelatinized buckwheat noodles obtained by steaming characterized buckwheat noodles made into a noodle string form for 20 to 30 min, as a hot raw material, is used, by adding this, together with the malted rice and process water for a secondary brewing process, to the primary unrefined liquor, agitating the liquor well by using the paddle rod or the like, fermenting the liquor at 25 to 30°C for 7 to 10 days, to make secondary unrefined spirit, then transferring the secondary unrefined spirit to a single type distiller, and heating and distilling, and thus the distilled buckwheat spirit is produced. <P>COPYRIGHT: (C)2008,JPO&INPIT</p>
