PROBLEM TO BE SOLVED: To provide an apparatus for deboning bony chop of a livestock carcass, which automates a streaking process to improve the efficiency of work, and to simplify and shorten the process of tearing off meats with a meat separator. SOLUTION: This apparatus for deboning the bony chop, has a suspending device for holding and suspending the exposed neck portion of the bony chop, and a meat separator placed below the suspending device and having a hole for nipping the bony chop, and used for tearing off the meat portion of the bony chop suspended with the suspending device, includes a cutter 33 disposed in between the suspended position w of the suspending device 1 and the meat separator 31; a lifting means 30 for the suspending device 1 and rotation means 303, 313 for synchronously rotating the suspending device 1 and the meat separator 31, and by lifting the suspending device 1 that holds and suspends the bony chop w with the lifting means 30, synchronously rotates the suspending device 1 and the meat separator 31 with the rotation means 303, 313 for cutting the tendons of the bony chop w with the cutter 33 into spiral shapes, and then tearing off the meat using the meat separator 31.
