The invention relates to an alimentary composition comprising dietary fibres and to the use thereof in preparing alimentary products. According to the invention, the composition presents features similar to that of butter or margarine and consists of at least one aqueous phase comprising dietary fibres, an emulsifying system and at least one oily phase comprising lipids.
