摘要 A preparation method of a fermented soybean composition is provided to obtain a refined peptide having a high ACE-inhibiting activity from the composition made by fermenting soybeans at a high temperature for a short term. A fermented soybean composition is prepared by the steps of: (a) mixing fat-removed soybeans and roasted wheat in a ratio of 1:1; (b) adding 0.1~0.2wt% of Aspergillus oryzae as seed malt to the mixture to make malt at 25~30°C for 3days; and (c) adding salt water to the malt, and fermenting it at 40~50°C for 2~5days. The preparation method further comprises: sterilizing the fermented soybean composition at 85~95°C, and then filtering it through diatomite.
