A method of cultivating cauliflower mushroom(Sparassis crispa) using raw chips or sawdust of thinned wood of coniferous plants without after ripening and steam treatment is provided to omit a mycelial scraping and to shorten the cultivation period by 20 days as compared with bottle cultivations and to improve the productivity. An internal tissue of cauliflower mushroom is transplanted into a potato agar medium and cultured at 20 to 30deg.C and 50 to 60deg.C for 20 to 30 days after subculturing to give liquid inoculum or solid inoculum. The liquid inoculum or solid inoculum is inoculated into a culture medium, cultured at 20 to 30deg.C and 50 to 70% humidity for 40 to 50 days under 1,000 to 2,000 lux illumination, subjected to mushroom differentiation and cultured for 20 to 30 days in a mushroom-growing room. The mushroom differentiation is performed at 18 to 22deg.C and 100% humidity in a state in which ventilation is turned off for 24hr to induce mushroom differentiation and then at 8 to 22deg.C and 90 to 100% humidity under 1,500 to 2,500 lux illumination in the mushroom-growing room while a ventilation device is turned on for 1 to 2min and off for 5 to 10min after 2 to 3 days. The culture medium is obtained by the steps of: mixing 35 to 50% by weight of a sawdust mixture containing 80 to 90% by weight of pine tree sawdust, 5 to 10% by weight of corn flour and 5 to 10% by weight of all-purpose flour and 50 to 65% by weight of water; sterilizing the mixture at 121deg.C and 1.2 atm for 90 to 120min and cooling to 15deg.C. |
