A process for preparation of ordinary strong pink wine, providing for the blending of grapes with segragation of combs, putrid and defective berries, sulfitation of obtained fiber by sulfuric anhydride, infusion of the mash on the fiber with periodic mixing, separation the mash from the fiber after the finishing of infusion, fermantation of fiber with its further fortification, decantation from the sediment, withdraw of the clarified wine materials form the yeast sediment, ageing in oaken container, bottling of treated wine materials. Grapes of such sorts are used as a crude in the ratio: As`ma - 50-70 %, Moldova - 30-50 %, riched the technical maturity, which responds to sugar concentration no less than 170 g/dmand mass concentration of titrating acids 8.00-10.00 g/dm. |
