PROBLEM TO BE SOLVED: To provide a processed vegetable product capable of preventing lowering of palate feeling of vegetables with time and a method for producing the processed vegetable product, and to provide a rolled sushi product using the processed vegetable product and a method for producing the rolled sushi product.

SOLUTION: This processed vegetable product is coated and formed with a calcium alginate film containing vinegar. The mole ratio of calcium to acetic acid in the calcium alginate film containing vinegar is 1:(0.1-1.8). The method for producing the processed vegetable product is provided. The rolled sushi product using the processed vegetable product, and the method for producing the rolled sushi product are also provided.
