PROBLEM TO BE SOLVED: To provide a defoaming agent exhibiting superior defoaming effects, even under strongly basic conditions, preferably, a defoaming agent for sugar manufacturing process. SOLUTION: The defoaming agent containing a propylene glycol fatty acid ester, containing at least 35 mass% of propylene glycol monocaprylic acid monooleic acid ester, preferably, a defoaming agent containing (A) 100 pts.mass of the propylene glycol fatty acid ester and (B) 0-100 pts.mass of a glycerol fatty acid ester; a sugar manufacturing method including a clarifying process with quicklime, wherein the defoaming agent is added to a treated liquid in at least one step of the clarifying process; and a sugar manufacturing method including a sucrose recovery step by the Steffen method, wherein the defoaming agent is added to the treated liquid in at least one step of the recovery process.
