The invention relates to a DNA sequence which codes for a polypeptide hav ing a lysophospholipase activity and isolated from Aspergillus, and sequence s derived therefrom. The invention also relates to the polypeptides having a lysophospholipase activity and encoded by said sequences, and to the use of said polypeptides for improving the filterability of syrups consisting of w heat starch and for related uses.
