A stable preparation containing sulphides is obtained from garlic by mechanically crushing the bulbs, hydrolysing the glycosides by means of the enzymes present in the bulbs with the addition of glucose, ammonium phosphate and an aliphatic acid, and adding colloidal silicic acid to stabilize the resulting liquid. It is stated that the mixture contains allyl sulphide, propyl sulphide, diallyl tetrasulphide and other diallyl sulphides. Examples are given of the process using citric and acetic acids, sodium silicate being added after fermentation to generate the silicic acid.ALSO:A stable garlic preparation for curative and nutritive purposes having a high content of alkyl or allyl sulphides is obtained by mechanically crushing garlic bulbs, fermenting the mixture with the enzymes present in the bulbs with the addition of glucose, ammonium phosphate and an aliphatic acid, and adding colloidal silicic acid to stabilise the resulting liquid.
