The present invention relates to the use of at least one inorganic nitrat e in a fermentation process for producing erythritol using a yeast strain of the species Moniliella as erythritol-producing microorganism, having the ch aracterizing feature that the at least one inorganic nitrate acts simultaneo usly not only as main nitrogen source but also as pH regulator in the cultur e medium, and also relates to such an improved process for producing erythri tol.
