A method for preparing an alcohol fermentation solution is provided to increase the utility of Goami no. 2 by finding out the fermentation adequacy, thereby being applied to prepare a low alcoholic fermented beverage. A method for preparing an alcohol fermentation solution comprises a step of fermenting Goami no. 2, a high fibrous rice with adding 4% of a fermenting agent regarding the rice and 0.2% of yeast regarding the total amount of mash thereto at a temperature of 30 deg.C for 3 days. A method for preparing a low alcoholic beverage comprises the steps of: (a) mixing the alcohol fermentation solution with an extract of a herb mixture consisting of Cinnamomi cortex, Zingiber officinale and Chinese date in a ratio of 5:3:2 and adding 2% of starch thereto; and (b) heat-treating the mixture for 5 minutes. Further, the fermentation agent comprises 4% of improved yeast and 10% of Koji. |
