FIELD: fish industry, in particular, automatic fish filleting equipment, may be used in land-based fish processing houses and fishing fleet vessels. ^ SUBSTANCE: apparatus has upper guide with fish trunk gripping devices, supporting guide having upper part defined by two intersecting surfaces oriented at obtuse angle with respect to each other, cutting unit equipped with pair of vertical and pair of horizontal disk-type knives, measuring unit formed as laser scanner, and actuating unit. Actuating unit has controlled gates disposed in respective slots on upper surface of supporting guide and mounted for vertical movement in order to measure distance between gates and horizontal disk-type knives for adjusting thickness of layer to be cut off. Apparatus is further equipped with fluorescent scanning unit for controlling fillet quality, and device for removing rejected fillet from conveyor. ^ EFFECT: increased efficiency and enhanced reliability in operation of apparatus. ^ 3 cl, 2 dwg |
