The dough processing system for production of bakery dough items e.g. rolls, bread, French bread, pizza and tortilla, comprises a moving station having a module reception device (9), dough piece-processing-change module that is interchangeable against another dough piece-processing-change module, and a depositing station. The module reception device has two stationary basic-drive sources (14, 15, 16), which act together with a drivable component of the dough piece-processing-change module via a coupler. The dough piece-processing-change module has a firmly assigned module-drive source. The dough piece-processing-change module has a firmly assigned module-drive source, a long roll module, humidification- or control module, stamping module, cutting module, synchronization module, by-pass module and depositing module. A drive source for driving the dough piece-processing-change module consists of tape drive and a drive for control device. The module drive device consists of bucket elevator drive and sliding-lift drive. The module reception device has a coded plug for change module detection.
