摘要 A novel Leuconostoc citreum S5 strain isolated from traditional watery radish kimchi is provided to show excellent dextran producing capability and be used for producing a fermented product with high viscosity and excellent sensory property, thereby using the obtained product ultimately as food materials. A Leuconostoc citreum S5 strain producing dextran is deposited as a deposition no. KCCM10778P. A method for preparing a fermented product including dextran comprises the steps of: (a) preparing a starter culture solution from the Leuconostoc citreum S5 strain; (b) preparing a base culture medium including a mixture solution of 10-30% sugar and 0.1-1% potato powder; and (c) inoculating 1-5 parts by weight of the starter culture solution to 100 parts by weight of the base culture medium and fermenting it at a temperature of 20-37 deg.C for 24-72 hours.
