A method for determination of the tendency of white table wine materials to nonenzymatic oxidizing browning comprises the collection of the analysed sample, its exposure under the conditions of acces of atmospheric oxygen and compiling of the conclusion about the tendency to oxidizing browning. The analysed sample is exposured under the conditions of higher temperatures, but not higher than 55 °С, after the thermal processing optical density is measured in the sample at wavelengths of 420 and 520 nm and the index of coloring power is calculated according to the formula. Than the conclusion about the tendency of wine materials and wines to oxidizing browning is compilled, and at the value of І>0.200 for the ordinary and І>0.300 for the vintage wine materials and wines the sample has the tendency to oxidizing browning. |
