Functional rice coated with the root extract of Cudrania tricuspidada Bur. and a method for producing the rice are provided to enhance the taste and flavor of rice after cooking and enable diabetics to eat rice freely. Functional rice coated with the root extract of Cudrania tricuspidada Bur. is produced by the steps of: (i) preparing the root of Cudrania tricuspidada Bur., sodium alginate, and rice; (ii) drying the root of Cudrania tricuspidada Bur., and cutting it fine; (iii) putting the cut root in water, performing hydrothermal extraction, and filtering the hydrothermal extract; (iv) drying the hydrothermal extract to make extract powder, diluting 1~30wt% of the extract powder with drinking water (based on the weight of the drinking water), and dissolving 0.1~1.0wt% of the sodium alginate in the diluted solution (based on the weight of the drinking water) to make a coating solution; and (v) coating the rice with 0.1~0.5wt% of the coating solution (based on the weight of the rice), and then drying the coated rice. |
