A method for the assessment of quality of liquid gelatine preparations comprises the sample collection, determination of appearance characteristics of, color, smell, taste, dynamic viscosity of aqueous solution of the gelatine having the mass concentration of 100 g/dm, the activity of hydrogen ions of gelatine aqueous solution with weight concentration of 10 g/dm, weight concentration of ash; the comparison of determined characteristics with established ones for compliance and compiling of the conclusion about gelatine quality. Additionally the characteristics of weight fraction of dry substances, weight fraction of proline and tannin precipitating ability of the gelatines is determined. |
