<P>PROBLEM TO BE SOLVED: To provide a method for producing soft nuts that enables continuous operations of turning into porous structures, and/or of swelling, and drying, and improvement in workability so as to produce soft nuts that can be chewed easily, even with a weak force and that has sensation of softness. <P>SOLUTION: The method for producing soft nuts includes the processes of housing raw material nuts in a sealed container; charging or not charging water in the sealed container and pressurizing and heating the raw material nuts so as to make the high-pressure and high-temperature water penetrate the raw material nuts in a liquid or gaseous state, followed by reducing the pressure in the sealed container to make the high-pressure and high-temperature water in the raw material nuts evaporate out of the raw material nuts, and make the raw material nuts porous and/or swollen; and to make the thus processed nuts dry, to maintain the nuts in the porous and/or swollen state.
