<P>PROBLEM TO BE SOLVED: To provide a carotenoid-containing emulsion having a high coloring effect, and to provide its granules. <P>SOLUTION: [1] The emulsion obtained by heating a suspension obtained by suspending a carotenoid in an organic solvent to dissolve the carotenoid in the organic solvent, emulsifying and suspending the obtained solution in an aqueous sodium polyacrylate solution in the presence of an emulsifier, and then distilling away the organic solvent, [2] the emulsion mentioned in [1], wherein the carotenoid is one of astaxanthin, canthaxanthin, and citranaxantin, [3] a method for producing an emulsion comprises heating a suspension obtained by suspending a carotenoid in an organic solvent to dissolve the carotenoid in the organic solvent, emulsifying and suspending the obtained solution in an aqueous sodium polyacrylate solution in the presence of an emulsifier, and then distilling away the organic solvent, and [4] the granules obtained by spray-drying the emulsion mentioned in [1]. <P>COPYRIGHT: (C)2008,JPO&INPIT |
