<P>PROBLEM TO BE SOLVED: To provide a method for producing space kimuchi with its preservation stability and quality secured even in an extreme environment. <P>SOLUTION: Specifically, the method for producing the space kimuchi includes conducting a heat treatment after aging kimuchi, and conducting a gas replacement packaging and a radiation irradiation under freezing conditions. By the is method, the objective kimuchi eatable and stably preservable for a long period even in extreme environments including deserts, alpine zones, the Arctic regions, the Antarctic regions and the Universe can be obtained. This method enables existing pickles including kimuchi to be prevented from declining in functional and physicochemical qualities owing to high-temperature and high-pressure treatment or high-dose radiation irradiation in undergoing complete sterilization of the foods. <P>COPYRIGHT: (C)2008,JPO&INPIT |
