PROBLEM TO BE SOLVED: To provide a method for producing 1,5-D-anhydroglucitol without using organic solvents. SOLUTION: The method for producing 1,5-D-anhydroglucitol comprises the contact of 1,5-D-anhydrofructose with microorganism capable of converting 1,5-D-anhydrofructose to 1,5-D-anhydroglucitol and the separation of the produced 1,5-D-anhydroglucitol.
