An image processing apparatus, a display device including the same and an image processing method thereof are provided to correct only a color signal irrespectively of a luminance level by reducing a lower saturation value and increasing a high saturation value according to saturation of the color signal, thereby reducing noise of lower gradation and sharpening color of high gradation. A color extractor(110) extracts a color signal after receiving an image signal. A converter(120) detects saturation by pixel of the color signal, and determines whether a pixel is a high saturation pixel, having saturation higher than predetermined reference saturation, or a low saturation pixel having a saturation lower than the reference saturation according to the saturation of each pixel. According to a predetermined conversion function, the converter increases a saturation of the high saturation pixel and reduces a saturation of the lower saturation pixel.
