<P>PROBLEM TO BE SOLVED: To isolate and identify the genes of N-acetyl-(R,S)-β-amino acid acylases, isolate and purify the N-acetyl-(R,S)-β-amino acid acylases from a bacterial mass, and determine the base sequence of the genes encoding these enzymes was determined so as to use a host such as Escherichia coli to construct a high-expression system for these genes. <P>SOLUTION: The present invention provides N-acetyl-(R)-β-amino acid acylases produced from Burkholderia sp. AJ110349 (FERM BP-10366) and novel genes encoding the enzymes, N-acetyl-(S)-β-amino acid acylases produced from Burkholderia sp. AJ110349 (FERM BP-10366) and novel genes encoding the enzymes, N-acetyl-(R)-β-amino acid acylases produced from Variovorax sp.
