A mixing sauce for noodles, and a method for preparing the mixing sauce for noodles are provided to reduce the selfish smell and to improve nutrition, taste and preference. A mixing sauce for noodles is prepared by controlling the pH of a mixing sauce base and a ground internal organs of a squid to be 2-5; self-degrading it by the proteinase contained in the internal organs at a temperature of 20-60 deg.C for 10-30 hours; heating it at a temperature of 90-110 deg.C for 20-30 min; and mixing the obtained self-degraded one of the internal organs of a squid, a bean powder and a kelp powder. |
