PROBLEM TO BE SOLVED: To provide a sheet peeling device and a sheet peeling method for peeling unnecessary sheet parts with compact equipment constitution without needing complicated control. SOLUTION: In peeling the unnecessary sheet parts 5 of an adhesive sheet 2 temporarily attached to a releasable sheet 1, a protruding roller 18 is rotated synchronously with intervals at which the unnecessary sheet parts 5 are conveyed, to allow a protruding part 17 on the outer peripheral surface of the protruding roller to abut on the unnecessary sheet parts 5, and a peeling tape 8 is pressed to the unnecessary sheet parts 5 by the protruding part 17 to wind the unnecessary sheet parts 5 together with the peeling tape 8.
