PROBLEM TO BE SOLVED: To achieve a method for producing a hydroxyalkyl (meth)acrylate by which the formation of a diester is suppressed and the hydroxyalkyl (meth)acrylate can efficiently be produced. SOLUTION: The method for producing the hydroxyalkyl (meth)acrylate is a method to react an alkylene oxide with acrylic or methacrylic acid. The method comprises using a diester inhibitor containing a compound having a structure represented by general formula (1): Y-COOR<SP>1</SP>äwherein, R<SP>1</SP>is an alkyl group or a hydroxyalkyl group; and Y is a hydroxy group, a COOR<SP>2</SP>group [wherein, R<SP>2</SP>is a hydrogen atom, an alkyl group or a hydroxyalkyl group] or a hydrocarbon group substituted with n X and represented by (X)<SB>n</SB>-R<SP>3</SP>[wherein, R<SP>3</SP>is a saturated or an unsaturated chain hydrocarbon group or a saturated or an unsaturated cyclic hydrocarbon group; X is a hydroxy group or a COOR<SP>2</SP>group; and n is an integer of 1-10]}.
