<P>PROBLEM TO BE SOLVED: To provide a lipolytic enzyme useful for various industrial purposes such as baking or confectionery. <P>SOLUTION: Disclosed is a polypeptide having lipolytic enzyme activity, a specific amino acid sequence being a mature peptide or an amino acid sequence modified by substitution, deletion and/or addition in the amino acid sequence.
