A preparation method of a bun using sulfur duck is provided to remove the peculiar smell of duck and to allow one to eat the duck conveniently. A preparation method of a bun using sulfur duck comprises the steps of: washing sulfur duck with underground rock water, sterilizing the sulfur duck with infrared rays, and separating the flesh from the sulfur duck; grinding the flesh in a mixer; mixing a seasoning consisting of pepper, garlic, ginger, cooking wine and salt to the grinded flesh; mixing oil to the flesh mixed with the seasoning; mixing turmeric, bean curd, Korean leek, soybean, Saururus chinensis, garlic, onion, ginger, leek and radish to the flesh mixed with oil; and stabilizing the mixture at room temperature for 30min and then aging it in a refrigerator for 24hr.
