<P>PROBLEM TO BE SOLVED: To provide food having moderate granular feeling (lumpy feeling) without falling apart while boiling even when subjected to cooking or retort treatment, and to provide a method for producing the cooked food. <P>SOLUTION: The method for producing cooked food comprises mixing crushed potato having a grain size of 1,180 μm mesh-pass to 600 μm mesh-on followed by cooking the mixture. The crushed potato has an maximum load detected by breakage strength measurement in a dry condition (dried until the water content thereof gets to 8-10 mass%) of 740-1,910 g (the maximum load (g) during a period when letting a cylindrical plunger having a diameter of 20 mm descend at a speed of 0.20 mm/s so as to have distortion of 80%). <P>COPYRIGHT: (C)2008,JPO&INPIT |
