PROBLEM TO BE SOLVED: To provide a cooling method by which a hot-rolled steel is uniformly cooled at a high cooling rate and cooling finishing temperature is highly accurately controlled. SOLUTION: The high-temperature hot-rolled steel is cooled with a cooling medium to which a water-soluble polymer is added. Since the cooling rate in film boiling is increased, the cooling rate can be improved and also, since variation in a heat flux in transition boiling becomes smaller, stable cooling in the transition boiling is made possible. Even when the steel is cooled to not higher than the incipient transition boiling temperature, the cooling finishing temperature is highly accurately controlled and the steel is uniformly and stably cooled.
