摘要 <P>PROBLEM TO BE SOLVED: To provide a method for producing mulberry leaves, obtaining the mulberry leaves having higher &gamma;-aminobutyric acid content than that of the leaves obtained by a production method performing only anaerobic treatment on the leaves. <P>SOLUTION: The method for producing mulberry leaves with high &gamma;-aminobutyric acid comprises performing serial operations of anaerobic treatment on the mulberry leaves to increase &gamma;-aminobutyric acid content and aerobic treatment to increase glutamic acid content and, finally, performing anaerobic treatment so that &gamma;-aminobutyric acid content is increased more than that obtained by performing only the anaerobic treatment. Preferably, the anaerobic treatment of the serial operations is performed for 13-35 hr, the aerobic treatment is performed 5-11 hr and the final anaerobic treatment is performed for 13-35 hr. Preferably the serial operations are repeated during the aminobutyric acid content is increased than that of final anaerobic treatment after the serial cycle of the anaerobic treatment and the aerobic treatment by 1 cycle before. <P>COPYRIGHT: (C)2008,JPO&INPIT
