<P>PROBLEM TO BE SOLVED: To provide a method for producing oil-in-water emulsion food excellent in freezing resistance causing no separation even when thawed after long preservation in a severe freezing condition at -20°C to -25°C, having excellent freezing resistance, and improved in oxidation stability compared with that in a method where fish oil is used alone. <P>SOLUTION: The method for producing oil-in-water emulsion food excellent in freezing resistance obtained by emulsifying an oil phase and a water phase, comprises using a mixture of Carthamus tinctorius and fish oil as oil-phase raw material, wherein a use ratio of the Carthamus tinctorius to the fish oil is (60:40) to (90:10).
