Squid ink noodles using squid ink, cuttlebone powder, wheat flour and salt are provided to be useful as health food having anticancer and antimicrobial action and to draw a customer's attention. Squid ink noodles are prepared by the steps of: kneading 90% by weight of wheat flour, 7% by weight of squid ink, 0.3% by weight of salt, 2.7% by weight of cuttlebone powder with less than 200 meshes and water; making a noodle sheet from the dough; extruding noodle strips from the noodle sheet by using a noodle making machine; and drying the noodle strips using a high-temperature or lyophilization method. |
