The invention relates to a fish-based product comprising at least fish me at, water, a starch premix and phosphate(s) and a method of making same. The product is preferably in loaf form, is substantially solid and not substant ially prone to flaking or crumbling in use. The product also substantially r etains the texture and flavour of unprocessed cooked fish meat. |
