PROBLEM TO BE SOLVED: To provide a device for removing both ends of bean sprouts, cutting and removing both root parts and sprout parts from bean sprouts. SOLUTION: This device for removing both ends of bean sprouts has a conveyor 1 which is set through laying down a plurality of holding compartments 3 for receiving bean sprouts in a condition of bringing the length direction transversely followed by rowing in the fore-and-aft direction, end receivers 5 and 8 which arrange in one direction projecting ends projecting from both the sides of the holding compartments 3, of bean sprouts arranged at intervals with both the sides of the conveyor 1 and received in the holding compartment 3, and cutters 7 and 10 which are arranged on both the sides of the conveyor 1. The device is set with a water supply means giving water current to the holding compartments 3, and formed to displace towards the end receiving parts 5 and 8 and arrange in one direction, the ends of bean sprouts placed on the holding compartments 3 by water current produced on the holding compartments 3, and cut ends of bean sprouts projecting from the holding compartments 3 with the cutters 7 and 10.
