PROBLEM TO BE SOLVED: To provide a method for extracting and separating a capsinoid compound from capsicum, by which the capsinoid compound can selectively be extracted and separated, while separating pigment ingredients. SOLUTION: This method for extracting and separating the capsinoid compound from capsicum is characterized by bringing mixed extraction solvents comprising water and an organic solvent, crushed capsicum, and activated carbon into contact with each other to extract the capsinoid compound from the capsicum with the mixed extraction solvents, and simultaneously making the activated carbon to adsorb pigment ingredients originated from capsicum in the mixed extraction solvents.
