<P>PROBLEM TO BE SOLVED: To provide a method for producing fish meat processed goods, using gelatin of a material which is avoided so far, and mixing with fish meat so as to offer unconventional new palate feeling, and capable of offering fish meat processed goods having high preservability even though mixing gelatin, and cookable in various ways through molding minced fish meat. <P>SOLUTION: This method for producing the fish meat processed goods comprises a first process of cutting about -10°C to about +5°C fish meat, a second process of further shredding the cut fish meat followed by mixing an antioxidant, vegetable oil and fat and collagen, a third process of mixing the about 12°C-about 20°C fish meat mixture produced in the second process with gelatin aqueous solution, and a fourth process of putting the fish meat mixture produced in the third process into a container and rapidly freezing the product at about -60°C to about -30°C or refrigerating at about 5°C for about 1 h-about 5 h. As the result of this, the method can offer unconventional new palate feeling, and the fish meat processed goods having high preservability and cookable in various ways. <P>COPYRIGHT: (C)2008,JPO&INPIT |
