A process for sterilizing or pasteurizing a food or pharmaceutical product without heating the material sufficiently to cause significant physical or chemical changes that would detrimentally affect the quality of the product. In this process, the product is treated with microwave radiation having a frequency and power density sufficient to penetrate throughout the product for a short period of time, generally a minute or less. |
