A process for the production of one or more fatty acids or derivatives th ereof from a carbohydrate, which process comprises treating the carbohydrate with a micro¬ organism which converts the carbohydrate to a microbial oil c omprising one or more fatty acids or derivatives thereof, in which the carbo hydrate is inulin and/or is derived from Jerusalem Artichoke.
