<P>PROBLEM TO BE SOLVED: To provide vegetarian meat having high moisture content, high fiber, organizing characteristics and high nutritive value, and to provide a method for producing the vegetarian meat. <P>SOLUTION: The vegetarian meat which has high moisture content, high fiber, organizing characteristics and high nutritive value is obtained by soaking, heating and coagulating whole soybeans, removing whey, and obtaining a soybean coagulated product with moisture content of about 70% followed by mixing and extruding. <P>COPYRIGHT: (C)2008,JPO&INPIT |
