摘要 A method for preparing a Lentinus edodes (Berk.) Sing. glue, and an edible Lentinus edodes (Berk.) Sing. glue prepared by the method are provided to obtain an edible glue used in the preparation of kimchi for improving the taste and storage stability of kimchi. A method for preparing a Lentinus edodes (Berk.) Sing. glue comprises the steps of putting Lentinus edodes (Berk.) Sing. and water in a ratio of 1 : 400-6,000 by weight in a heating container and heating it at a temperature of 90-110 deg.C for 0.5-6 hours for hot water extraction; and mixing the obtained Lentinus edodes (Berk.) Sing. extract and cereal or millet for edible glue in a ratio of 3-20 : 1 by weight and boiling the obtained mixture at a temperature of 80-110 deg.C for 0.3-5 hours.
