NATURAL BEAN-CURD SOLIDIFIER CONTAINING OPUNTIA FICUS AND METHOD FOR PRODUCING THE SAME

A method for preparing a natural dubu(bean curd) solidifying agent, and a natural dubu solidifying agent prepared by the method are provided to obtain the dubu of high quality having improved nutrition, brown color, specific taste and apple perfume. A method for preparing a natural dubu(bean curd) solidifying agent comprises the steps of mixing the washed and pulverized Opuntia ficus indica and a plum in a ratio of 12-15 : 1 by weight; adding 2-3 times of water by weight to the mixture to extract it at a temperature of 90-130 deg.C for 3-6 hours; adding pectinase to the obtained extract to react it at a temperature of 50-60 deg.C for 2 hours; terminating the reaction at a temperature of 90 deg.C for 30 min; filtering the extract three times to obtain a mixture extract of Opuntia ficus indica and a plum; mixing the mixture extract with a completely matured apple extract having pH of 4-5 in a ratio of 1 :0.15-0.2 by weight; and concentrating it.
