The invention relates to food industry, in particular to express-methos for determination of quantitative content of phospholipids in unhydrated oils and phosphatide concentrates irrespectively of nature of unhydrated oil (sunflower, soy, rape and others). The method includes preparation of sample under investigation, calibration graph and determination of optical density of sample being studied, at that the sample with vegetable unhydrated oil or phosphatide concentrate is placed to silicon bath for two hours at temperature 200 °C, with measurement of its optical density at wavelength 670 nm and with determination of amount of phospholipids depending on value of optical density obtained from just built calibration graph. |
