<P>PROBLEM TO BE SOLVED: To provide Chirimen (dried baby sardine) processed food having refreshing pickled-plum flavor refurbished from conventional soy sauce flavor so as to promote its quality such as palate feeling, taste, appearance, safety and the like: and to provide a method for producing the Chirimen processed food. <P>SOLUTION: The Chirimen processed food is obtained by boiling down dried baby sardines with seasoning liquid. The seasoning liquid contains plum flesh and has plum flavor. The method for producing the Chirimen processed food comprises a pre-treatment process where the dried baby sardines are desalinated and made swollen, a seasoning liquid soaking process where the pretreated dried baby sardines are soaked in the seasoning liquid, and a boiling-down process where the dried baby sardines are heated while kept soaked in the seasoning liquid. The seasoning liquid contains fresh water, alcohol, plum flesh and sweetener. The content of the plum flesh in the seasoning liquid is preferably 0.15-0.9 times of the mass of the dried baby sardines. The boiling-down process may comprise a strong-fire boiling process for heating the dried baby sardines with strong fire for a short time in its early stage, and a weak-fire boiling process for heating the dried baby sardines with weak fire after the strong-fire boiling process.
