PROBLEM TO BE SOLVED: To provide a method for producing protein structured material enabling production of a protein structured material having juicy feeling and soft feeling to impart the juicy feeling and the soft feeling to a processed meat product and or daily dishes. SOLUTION: The method for producing a protein structured material comprises extruding protein raw material, hydroxypropylated starch and water under pressurized/heated condition so as to be swollen.
