PROBLEM TO BE SOLVED: To provide a method for producing wet rice cracker having springy rice cake-like peculiar palate feeling, and to provide the wet rice cracker. SOLUTION: This method for producing the wet rice cracker comprises drying and baking rice cracker dough passing through a molding process, impregnating the rice cracker dough with seasoning liquid in a seasoning process, and heating and drying to re-pregelatinize the rice cracker dough in a re-pregelatinizing process. In more details, the method comprises impregnating the rice cracker dough after baking with 30°C-50°C seasoning liquid for 10-50 s in the seasoning process, heating and drying the product at 70°C-80°C for≥15 min in the following re-pregelatinizing process, and extending and punching the rice cracker dough in a molding process. It is all right to impregnate the rice cracker dough with water followed by roasting, and further add and mix beans or seeds subjected to hydration treatment to/with the product, or mix an edible oil and fat composition containing oil and fat and an emulsifier with the rice cracker dough.
