PROBLEM TO BE SOLVED: To provide a method for producing dried fish enabling production of dried fish causing no clearance nor cracks in the inner part of the dried fish to be obtained while reducing time required for production of the dried fish. SOLUTION: The method for producing dried fish comprises a first step of a heating process where fish having a temperature of≤0°C is heated in water at 40-75°C for 45-100 min, and a second step of the heating process where the fish is heated in water at 75-120°C for 30 min to 4 h. The dried fish is obtained by the method for producing dried fish, wherein the content of inosinic acid is≥800 mg based on 100 g of the dried fish. COPYRIGHT: (C)2008,JPO&INPIT
